Ingredients

1 pound dried pinto beans
1 onion, chopped
4 bacon slices, chopped
4 garlic cloves, sliced
1 jalapeño chili, halved

Preparation

  1. Step 1

    Place beans in large pot. Add enough water to cover beans by 3 inches. Soak beans overnight.

    Step 2

    Drain beans and return to same pot. Add enough water to pot to cover beans by 4 inches. Mix in remaining ingredients. Simmer over medium heat until beans are tender and creamy, stirring occasionally, about 1 1/2 hours. Season with salt and serve.
