Lychee, Lime & Ginger Salad

Trying to take a lychee off its pit is nearly impossible. I leave them on their pits which does nothing to detract from the quality of this salad! You can use canned lychees, which are surprisingly delicious.

Ingredients

2 pounds of lychees in the shell (or canned lychees)
2 tablespoons freshly squeezed lime juice
2 tablespoons diced, candied ginger (from about a one-half ounce chunk of candied ginger)

Preparation

  1. Peel the lychees and place them in a medium-sized bowl. Drizzle the lime juice over them, then add the diced ginger and toss until all the ingredients are combined. Serve immediately, garnished with a thick curl of lime zest.
