Gently drain the liquid from the top of the yogurt before combining with other ingredients so that the flavors are not diluted.

Ingredients

1 cup plain nonfat yogurt
1 teaspoon finely grated lemon zest
1 tablespoon fresh lemon juice
1/4 cup chopped fresh mint or parsley, if available, or 1/2 teaspoon dried tarragon
Salt and freshly ground black pepper, to taste

  1. Combine all of the ingredients in a small bowl. Refrigerate, covered, until needed.
